What better tasty treat to make than a clean eating quinoa and turkey pattie? I was really in the mood for a breakfast sausage or some turkey bacon. Since I eat clean, I don’t eat either of those. I did however come up with a delicious recipe to satisfy any cravings I may have. I am in love with this yummy little things!
I had some turkey on hand, some fresh herbs, and other ingredients that allowed me to throw this recipe together. I didn’t have breadcrumbs and I don’t really eat them anyway. My solution was quinoa. I used red and white.
I added fresh garlic, thyme, rosemary and parsley to my recipe.
In a previous recipes I used my friend Keri’s canned roasted red peppers. I really felt these would be the taste I was going for in this recipe. Here they are in my Vitamix. I wanted them in smaller pieces, chunky not blended.
I added all the ingredients to the turkey in my kitchen-aid, or rather my husbands kitchen aid and mixed it all together.
The next step once it was all mixed well was to shape the patties/sausages.
I baked these beauties at 350 for about twenty minutes. Then tested with a meat thermometer making sure they are cooked.
I also wanted to add a little more flavour to the second batch. I had some clean artichoke bruschetta in my pantry. I added a cup.
These were a hit with my family. They could easily be transformed into meatballs, meatloaf, turkey burgers, or even appetizers. So here is the breakdown of what I used. You all know by now I never follow recipes so I will try my best.
2 tbsp of olive oil.
2 garlic cloves
3 stalks of celery-diced
I sauteed the garlic and celery and added them to the turkey.
Next was the fresh parsley rosemary and thyme. I would say I chopped up about 3 tbsp’s of each. I used about three pounds of turkey, so enough herbs to give it taste but balance it out and not overpower it.
quinoa-I added two cups of each, cooked red and white.
1 small mason jar of roasted red peppers with oil. Chopped in the vitamix.
Everything went into the mixer, and then it was simply shape and bake.
I will definitely be making this again.
