Have you ever had salad for breakfast?
When I began clean eating three years ago, I stopped eating a lot of things that were potentially aggravating my body. When I began following the Paleo Diet last year there were many things that were new to me.
I used to be a coffee and toast for breakfast kind of person. I never would have eaten a salad for breakfast.Yet here I am and salad is one of my favourite things to eat in the morning. The picture you see above is my favourite base to start with which is julienned carrots and chopped fresh parsley.
I then add to that base with whatever is on hand. This morning I had prosciutto, as I don’t eat bacon anymore. It’s very hard to find bacon that fits the Paleo lifestyle I follow. Bacon has a lot of things added to it that are simply not good for your body.
I know I know the bacon lovers are asking me how on earth is it possible?
The truth is if you look at the ingredients in prosciutto all you will find is pork and salt. That’s it. So for me it’s a much better option, and I do cook it slowly in the pan so it gets crispy. It has a different taste but not a bad one and I’ve added it to omelets as well. It’s really yummy.
The next thing I added was some roasted asparagus from the night before. I also added hemp hearts and sunflower seeds. I made a simply fresh lime juice, olive oil, salt and pepper dressing and voila. Breakfast was served.
It was delicious. If you have never tried salad for breakfast, I urge you to give it a try. It’s different but refreshing and so healthy.
